Google Search Console has a bug with the Search Performance report, where if you want to filter by Search Appearance, it won’t show you all the options. Google is aware of the bug and it should be fixed soon.

Google Confirms Google Search Serving Issue
Google has confirmed a Google Search serving issue that is currently ongoing and impacting serving “some pages in some locales.” This is a large enough issue that Google posted about it on its Google Search Status Dashboard.
